Traditional Rajasthani Gatte ki Sabji
Gatte ki sabji , which translates to gram flour casserole, is an authentic Rajasthani dish you can enjoy on festive occasions, like weddings and birthdays. How to prepare Gatte ki Sabji
What you will need to prepare gatte ka sabzi is: 3 1⁄2 cup of Gram flour, 2 tsp of oil, 1 tsp of cumin seeds, 1⁄4 tsp asafoetida powder (hing), 1 tbsp curd/yogurt, 1⁄2 tsp red chilli powder and salt. Prepare vegetables like- carrot, beans and pumpkin. Heat a pan on medium flame. Once it is hot add oil to it and mix in cumin seeds. When they start crackling add hing and gram flour to it. Mix well till all gram flour gets coated with oil. Add little water at time while mixing so that no lumps are formed. Cook for 5 minutes on low flame till gram flour starts leaving sides of pan and becomes dry. Now add curd/yogurt, red chilli powder and salt to it and mix well for another minute or two till all ingredients get mixed properly together.

Serving Tips
In a pan add half cup of oil and heat it. When oil is hot add mustard seeds to it. Once they start crackling then add garlic, cumin seeds, and finely chopped onions to it. Now add grated vegetables to it. Take care not to make vegetables too crispy or burnt. Add salt, black salt and red chili powder according to your taste buds for more taste use lemon juice in place of tamarind extract. Garnish with coriander leaves and serve with chapati or rice. This sabzi can be served with any type of bread as well. It tastes great when served with breads like tandoori roti, phulka etc.
